Morning Glory Muffins


 2 eggs

125 ml vegetable oil

250 ml soy milk

250 g  brown sugar

400g self raising flour

1 tsp salt

one carrot, grated

50g chopped walnuts

50g dried currants

Whisk eggs, add oil, milk, and sugar and whisk to combine. Whisk in flour and salt being careful not to overmix. Add carrots, walnuts, and currants bake at 200C for 20 minutes. Make a glaze of maple syrup and icing sugar and drizzle on top.
