Morning Glory Muffins

 2 eggs 125 ml vegetable oil 250 ml soy milk 250 g  brown sugar 400g self raising flour 1 tsp salt one carrot, grated 50g chopped walnuts 50g dried currants Whisk eggs, add oil, milk, and sugar and whisk to combine. Whisk in flour and salt being careful not to overmix. Add carrots, walnuts, and currants bake at 200C for 20 minutes. Make a glaze of maple syrup and icing sugar and drizzle on top.

Roasted Vegetable Soup

Roast two carrots, one parsnip, one large sweet potato, one red pepper, two seeded tomatoes, fresh thyme, and a head of garlic with the top cut off for one hour at 200C. Squeeze roasted garlic out and puree roasted vegetables with chicken stock to form a soup. Serve with bread or croutons!

Chicken in Parchment

After roasting two potatoes whole, grill marking the chicken, and cooking down the onions and peppers in balsamic and brown sugar you can assemble your dinner! Slice the potatoes and top with peppers. Finish with your seared chicken and bake at 200C for thirty minutes.

Potstickers

  Homemade potstickers are delicious. The filling is ground pork, ginger, Shaoxing rice wine, soy sauce, salt and pepper, chopped scallions, sesame oil, sugar, fresh coriander, and kaffir lime leaves.The dipping sauce is soy, rice wine vinegar and chili oil. The potsticker shape get seared briefly before steaming, and the "fat cat" shape just gets steamed as is.

Bonfire Pie

This pie is made to celebrate Guy Fawkes Day, and is good hot or cold! Combine 400g bread flour, 1 tsp chili powder, 5 tsp smoked paprika, 2 tsp salt, and 1/2 tsp baking powder. Rub in 50g of butter and 25 ml of olive oil. Bring together with an egg and about 100ml water. Rest for an hour. Roll out half to a rectangle and fill and season. For the first layer add sliced potatoes baked in their skin and fresh thyme. Cover with salami and red onions roasted in their skins and sliced. Roll out second half of dough and cover and crimp the edges. Egg wash and cover with sea salt. Bake at 200C for 40 minutes.

Roast Chicken

Everyone loves a good roast and roast chicken is super simple. Average cooking time is one and a quarter hours and I like roast sweet potato and potato with mine. Add some flour to the pan drippings and whisk to form a roux and add hot chicken stock to make a gravy. Done!
